Today, I have made this delicious vegetarian lentil soup spicy and would like to share it with you all. Nice to have it on a cold day, a warm soup that is rich in flavors with a little spice to it and it is not even hard to make it.

The main ingredients that I have used today are of course lentils, carrots and potatoes. Lentils are a good source of iron and has beneficial nutrients such as fiber, proteins and loads of vitamins.

And the rest are just spices, which you would most likely store those in your kitchen cupboards. So why not give it a try?

  1. On a medium size pan, warm the olive oil. I have chosen olive oil instead of vegetable oil, as it is more healthier and gives a lovely taste to the soup.
  2. Once the oil is hot, add the chopped onion, carrots and potatoes. Keep stirring until the onions becomes softened.
  3. Add the garlic, curry powder, ground cumin and the dried thyme to the pan. Stir it all again for 30 seconds so it does not get all dry and sticky at the bottom of the pan.
  4. Add the diced tomatoes and cook it for a few more minutes by stirring it often so the flavours will be more enhanced.
  5. Pour in the lentils and mix it all. Then add the vegetable broth and water and stir it all again.
  6. Add salt, the red pepper flakes and some freshly ground pepper to season the soup. Increase the heat to boil and then reduce it by leaving the lid half open to let it gently simmer. Let it cook now for 30 minutes, until the lentils softens. Keep stirring evenly in between.
  7. Transfer two cups of the soup to a blender. Once it has become like a purée, then pour it back in the pan with the rest of the soup. Mix it all well and cook it for another 5 minutes.
  8. Remove the pan from the hob and add the lemon juice to the soup. Stir it and add the fresh coriander leaves. You can season with salt and pepper until you get the flavours perfect to your taste. You can have this soup with some Ryvita flatbreads on the side. And now dig in and enjoy!!! 🙂
